I usually start a student off in an informal manner until I find out where they are what they like and where they want to go. Depending on their level I introduce new chords to them basic tonal centers (need to know progressions) signature guitar licks riffs scales and I try to sneak in a bit of theory as we go. I encourage improvisation innovation all the while focusing on the student s wants as not to bore them with all the math behind the music. (This is my approach mostly with beginners). With intermediate and advance students I will try to enlighten them with some basic theory. I think it is important to learn songs they like and can relate to and ultimately grasping the concept of playing with others....
